1 medium yellow onion, diced
3 stalks celery, diced
3 carrots, sliced
2 bay leaves
1 tbsp fresh thyme leaves
1 tsp kosher salt

2 cups dried green split peas
6 cups low-sodium broth
1 smoked beef shank or 1/4 tsp smoked paprika
2 tbsp chopped parsley
1. Melt butter and sauté onion, celery, and carrots.
