Required Utensils

This recipe doesn’t require any fancy equipment — just a few basic utensils for easy, stress-free cooking.
• Large pan or pot
• Sharp knife
• Cutting board
• Measuring cups and spoons
• Mixing bowls
• Spatula or wooden spoon
• Baking dish (if needed)

Preparation Steps (Beginner-Friendly)

  1. Melt the butter with the olive oil in a heavy-bottomed Dutch oven. Add the sliced onions and cook slowly with the lid on for 15 minutes, stirring occasionally. 😊
  2. Remove the lid, raise the heat to medium, sprinkle in the salt and sugar, and stir often for 40–45 minutes until the onions turn deep golden and caramel-sweet.
  3. Sprinkle the flour over the onions and cook for 3–4 minutes, stirring until the mixture thickens slightly and smells toasty.
  4. Remove from heat and pour in the stock and broth. Stir well, return to heat, and simmer gently for 30–40 minutes. The soup should look rich and slightly glossy.
  5. Add a splash of warm broth, taste, and adjust seasoning. While the soup simmers, toast your bread cubes for a crisp finish. 🥣
  6. Preheat the oven to 350°F (175°C). Ladle the soup into oven-safe bowls, top with toasted bread, and sprinkle generously with Gruyère.
  7. Bake for 15 minutes, then broil briefly until the cheese turns golden and bubbly. Watch closely to prevent burning. ✨
  8. Serve immediately while hot and melty.

Chef’s Tips

• Store leftovers in the refrigerator for up to 3 days; reheat gently to preserve flavor.
• Use deeply caramelized onions — the color determines the richness of the soup.
• Prepare the onion base a day ahead for even deeper flavor.
• Serve with a simple green salad or crusty bread for a complete meal.
