French Onion Soup for Two A cozy, cheesy, golden soup perfect for intimate meals.

Ingredients

1/2 cup unsalted butter

2 tablespoons olive oil

4 cups sliced onions

5 cups beef broth

1 teaspoon dried thyme

1 pinch salt and pepper

4 slices French bread

4 slices provolone cheese

2 slices Swiss cheese, diced

1/4 cup grated Parmesan cheese

Instructions

1. Melt butter and olive oil in a pot.

2. Add onions and cook until tender and translucent.

3. Stir in broth and thyme, season with salt and pepper, and simmer 30 minutes.

4. Preheat oven broiler.

5. Toast French bread slices.

6. Ladle soup into bowls and top with bread.

7. Layer with provolone, Swiss, and Parmesan.

8. Broil 2–3 minutes until cheese bubbles and browns.

Notes

Store soup without bread for best texture.

Freeze broth up to 3 months.
