Ingredients

4 tbsp butter

6 cups thinly sliced onions

1 garlic clove, minced

2 tbsp all-purpose flour

4 cups beef stock

1/4 tsp dried thyme

Salt and pepper, to taste

48 slices crusty bread

1/2 cup shredded mozzarella

1/2 cup shredded Gruyere

Instructions

1. Caramelize onions in butter 30–45 minutes.

2. Add garlic; cook 1 minute.

3. Stir in flour and cook 1 minute.

4. Add stock and thyme; simmer 10 minutes.

5. Season with salt and pepper.

6. Toast bread slices.

7. Fill bowls with soup; top with bread and cheeses.

8. Broil until cheese melts and bubbles.

Notes

Use a mix of onions for balanced flavor.

Swiss cheese works as an alternative.

Make cheesy toasts separately if bowls aren’t broiler-safe.
