Freshly ground black pepper, to taste
4 cups low-sodium beef broth
3 tbsp balsamic vinegar
2 tbsp tomato paste
1 1/2 lbs yellow potatoes, peeled and cut into 1-inch chunks

Required Utensils

This recipe doesn’t require any fancy equipment — just a few basic utensils for easy, stress-free cooking.

Slow cooker (6-quart or larger)
Sharp knife
Cutting board
Measuring cups and spoons
Mixing bowl
Wooden spoon or spatula

Preparation Steps (Beginner-Friendly)

  1. Place the stew meat in the bottom of your slow cooker. Add garlic, herbs, bay leaves, and black pepper.
  2. Pour in the beef broth, then add balsamic vinegar and tomato paste. Stir gently until everything looks well combined.
  3. Add potatoes, carrots, green beans, corn, and peas. Make sure the vegetables sit comfortably in the broth.
  4. Cover and cook on LOW for 8–10 hours, until the beef becomes tender and the vegetables soften. Slow cooking builds deep flavor. 🍲
  5. About an hour before serving, whisk cornstarch and water together. Pour the mixture into the cooker and stir well.
  6. Continue cooking with the lid on. The broth should thicken slightly into a rich, smooth stew.
  7. Taste and add salt or extra pepper if needed. The stew should be warm, hearty, and full of tender vegetables. Garnish and serve. 🥕✨

Chef’s Tips

  • Yukon Gold or red potatoes hold their shape beautifully during long cooking.
  • Add peas in the last 15 minutes if you prefer them bright green.
  • For extra richness, sear the beef before slow cooking.
  • Refrigerate leftovers for up to 3 days; flavors deepen overnight.
