Ingredients

1 lb lean ground beef
4 medium russet potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
4 cups low-sodium beef broth
2 cups shredded sharp cheddar cheese
1 cup milk or heavy cream
Salt and black pepper, to taste

Instructions

  • Cook ground beef over medium heat until browned; drain excess fat.

  • Add onion and garlic. Sauté 3–4 minutes until softened.

  • Add potatoes and broth. Bring to a boil, then simmer 15–20 minutes until potatoes are tender.

  • Reduce heat and stir in cheddar and milk or cream. Simmer 3–5 minutes until creamy.

 

  • Season to taste and serve warm.

Notes

• Heavy cream gives the richest texture.
• Add thyme or paprika for extra flavor.
• Reheat gently to avoid separating the cream.
