1 pound lean ground beef
2 tbsp butter
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
3 tbsp all-purpose flour
3 cups chicken broth
2 cups diced potatoes
1 tsp dried basil
½ tsp dried oregano
½ tsp salt
½ tsp pepper
2 cups milk or half & half
2 cups shredded cheddar cheese
¼ cup sour cream (optional)

1. Brown the ground beef and drain; set aside.
2. Melt butter and sauté onion, carrots, and celery.
3. Add garlic and cook 30 seconds.

4. Stir in flour and cook 1–2 minutes.
5. Pour in broth and add potatoes, herbs, salt, and pepper.
6. Return beef to pot and simmer until potatoes soften.
7. Stir in milk and cheddar until melted.
8. Mix in sour cream if desired; serve warm.
Use freshly shredded cheddar for smooth melting.
